Here's one of the more obscure:

Winter Games (Epyx) - "Free Skating"

I love the ending to that one. Reminds me a bit of "Chariots of Fire" by Vangelis. Umm...the game also has a nice, minimalist rendition of Tchaikovsky's Flower Waltz.
