PS3 doesn't have a on-board sequencer like the PS1 and PS2 did. And normally I would say the soundtrack is composed by a sequencer such as Cubase or Pro Logic (as in the case with the majority of Japanese game soundtracks nowadays), but the liner notes credit:

without any mention of a specific song. The fact that Uematsu's songs are arranged here, I'd say the songs incorporate real instruments as much as possible, but I could be wrong.
