Just to double check, you're:
- Going to your wishlist
- Hitting "Manage Wish List" in the upper right
- Changing prices or notes and then hitting "Submit Changes" while "Edit Fields" is selected in the lower left to edit details
- Selecting checkboxes and then hitting "Submit Changes" while "Remove from Wish List" is selected to delete items
Asking because this does all work for me, so if it doesn't work for you then it seems there's something going wrong with your wishlist specifically.
