Hmm, Uematsu's arrangements of FFI are excellent, with a beautiful acoustic feel, like "Cornelia's Castle" and "Town" (nice guitar!). I also like the light approach to dungeons tracks like "Chaos' Temple" and "Underwater Temple", which is quite unexpected but works really well.

Sekito's arrangements sound a lot like his music from Musashi, so it's a bit... weird.
His arrangements on FFIII are functional but the original music deserved better. "Eternal Wind" is, I think, Uematsu's masterpiece from the 8-bit era and the DS version really doesn't convey the same dreamy feel. I hate 8-bit music but with "Eternal Wind" the original is still unsurpassed.
