For the Black set, it makes special mention of several titles that will be on CD in full for the first time: Legacy of Darkness, Dracula X (Vampire's Kiss in Europe), Simon's Quest NES, and Dracula's Curse NES. The wording implies that everything else will be complete as well.
For the Red set, it makes special mention of things that were cut from the 2010 box: the full Order of Ecclesia OST (including the 5 unreleased record player tracks), 8 tracks from the Saturn version of Symphony of the Night, and "Another Tale from Castlevania" (bonus tracks from the Lament of Innocence OST)
