At the bottom of interior booklet image the lyricist for song of demeter and gradus vita is written, however I can't make it out with the font they used.

It looks to me something like Mami or Inami ()amada or ()amaba

It's an H. Mami Hamada.

I think you are correct and it may have been chosen for its looks + name to make a small joke.

Name of the font being Gutenberg, named after Johannes Gutenberg the creator of the printing press, who was also german.

Since the anime deals with written word, mostly on books that were probably made with the invention and with nazis.

Correct me if I'm wrong, but wouldn't "狗の刻" translate to "Hour of the Dog" rather than "Dog's Scratch? If so then it might be a reference to the fifth hour of the night in the traditional Japanese time system which is associated with the dog zodiac. I know that "刻" can be read as "carve" or "engrave," but I'm not sure about "scratch." It wouldn't really make much sense in context either since the dog in question is presumably referring to either Baskerville or Alucard himself, neither of which ever scratch.

about that translation, it was done long ago and for an anime I've never seen (only found info about a dog --cf. album title and kuroinu in tr.4)
now I've a doubt, I wonder if 狗 is really meant "dog"

tr.7 could be "useless moment" and tr.10 could be "useless crap"

That's just how it was described in one of the results that I looked at, so it's possible that part was wrong or that I just misunderstood what they meant. Regardless, the "hour of the dog" apparently refers to the evening which within the context of Hellsing might be in refrence to how vampires are associated with the night.

I think "dog" is the intended reading since it appears to be alluding to Alucard's most iconic familiar, the "black dog."

I'm pretty confident that "Dog Shit" is the intended reading. It's likely referring to how Alucard calls Luke "dog shit" after the black dog devours him. Although ironically, iirc, this track isn't actually used in that scene.
