According to Niikura's website, in terms of music he only lists doing "Music Stinger", which would mean that all of the jingles are by him. He is not credited as a composer in-game either since his contributions were only jingles. The remaining unconfirmed ones are most likely to be by Adachi; it seems all of Shimizu's contributions (LocoRoco character songs) appear on COCZ-1053.

Dug into JASRAC, and it turns out Niikura composed three of the five jingles. Shimizu actually composed all of the instrumental tracks (and both world clear jingles), not Adachi. So it's clear that Shimizu was effectively the lead composer for the game, with Adachi contributing all of the muimui songs and Niikura doing SFX and some jingles.
