It is technically accurate, but the weirdness is that in English "can't wait" usually expresses excitement, which isn't the case here. It's more of a warning: you can't wait until night so hurry up. So while not literal, I think "Don't Wait Until Night" is much closer to the intent of the Japanese title.

Adding on to this, if "夜まで待てない" was instead written as "夜まで待てない," then it would be "Don't Wait until Night."
In a lot of cases, if a verb ends with "しないで" or "ないで" then it's a request, like "don't do this or that." However, on it's own "ない" would literally just be the "not" part of its meaning.

Depending on how you look at it, the title could imply that Simon can't wait until night because he's eager to fight Dracula, or it could be more like a factual statement and Simon can't wait until night because it might be too late to save Selena by then. I'm inclined to believe the latter interpretation since it makes a lot more sense in context. Simon's wife is in danger so presumably he should be concerned about her safety, not excited about the prospect of fighting Dracula.

Additionally, it's worth mentioning that the title was also translated as "Can't Wait Until Night" in Super Smash Bros. Ultimate which I feel gives it some added credibility.

You're forgetting that the verb is still in potential form which would be odd to make into a request. "Don't be able to wait" ?

It's not impossible but that would be an unusual way to word it in Japanese. You'd typically express this with 待ち遠しい or 楽しみにする.

I already brought it up on the Castlevania: Track Translation Thread, but since we're on the topic of Haunted Castle translations I may as well mention it here too. The music player in the Castlevania Dominus Collection features translations for Haunted Castle's soundtrack, but unlike Order of Ecclesia, Portrait of Ruin and Dawn of Sorrow, these translations don't appear to be taken from iTunes since Haunted Castle's OST wasn't released digitally. For context, the translations used on iTunes for the various Castlevania albums were lazily copied from VGMdb. It's possible that the translations used for Haunted Castle were just copied from VGMdb as well, but I'm not so sure that was the case this time since "Dracula Resurrected," "Demon Resurrection" and "Another Battle" don't match any of the translations that we currently have listed for those tracks on the site.

Additionally, the stage titles in Haunted Castle Revisited are named after their respective music tracks, and are written in English even when the game is set to Japanese. The stage titles are "Cross Your Heart," "Lullaby of the Devils," "Bloody Tears," "Basement Melody," "Clock Tower Fear" and "Heart of Fire." However, Can't Wait Until Night has yet again been erroneously labeled as "Heart of Fire." The Aria of Sorrow and Harmony of Despair versions of the track were a medley comprised of both Can't Wait Until Night and Heart of Fire, so the name change was at least understandable in those two instances, especially since the latter is the more well-known of the two tracks. However, Heart of Fire isn't featured at all in the Revisited version of Can't Wait Until Night so the name change doesn't make any sense here.

Other than that, the translations seem pretty good. I personally think that "No Turning Back" and "A Lullaby for the Devils" would have sounded more natural though. Also, it looks like they omitted "悪魔" from "悪魔城の崩壊" so rather than "Collapse of the Devil's/Demon Castle" it's just "Collapse of the Castle." That's understandable though since the series is pretty inconsistent when it comes to translating "悪魔城." It might also be worth mentioning that "地下室のメロディー" was translated as "Underground Melodies" in Dawn of Sorrow's sound test.

甦りしドラキュラ = Dracula Resurrected
悲劇のWedding March = Wedding March of Tragedy
十字架を胸に = Cross Your Heart
悪魔の復活 = Demon Resurrection
戦いふたたび = Another Battle
悪魔たちのララバイ = Lullaby of the Devils
