I noticed that "wood bass" isn't listed in his credits, but this is the most common credit I see for him when going through booklets.

How do people figure out whether that is a double bass or some kind of acoustic bass guitar? (He plays both.)

Wood bass is a wasei-eigo word for the double bass, so it would not be used to refer to a bass guitar except in error (see https://ja.wikipedia.org/wiki/コントラバス for example).

For how we classify bass instruments:
- We have a separate role for just "Bass" without further qualifications, so if it's just Bass those credits would go there rather than trying to determine whether it's double bass or bass guitar: https://vgmdb.net/role/32
- For Double Bass or Contrabass credits those go to the Contrabass role: https://vgmdb.net/role/74
- For Wood Bass credits, they go to the Upright Bass role: https://vgmdb.net/role/174

Although Contrabass and Wood Bass refers to the same instrument, they've been split because the credits usually signify different styles of playing and can sometimes even appear together:

(from SQEX-10730)

For clarification, they tend to use "wood bass" or "upright bass" when the strings are plucked / "contrabass" or "double bass" when the strings are bowed.

Is this pattern really so common?

Different person, but here's Hiroyuki Sawano using "bass" to refer to an upright double bass being plucked:

"Bass" by itself is just a general term that can refer to any type.

If this weren't a discussion thread regarding site roles, I would very much have liked to take part in it...
