I looked into Ganbare Goemon games' composer breakdowns, and it seems like no games have track-by-track credits, except for these three that were composed by just one person:

1991, SNES — Ganbare Goemon: Yukihime Kyuushutsu Emaki (aka The Legend of the Mystical Ninja)
— composed by Harumi Ueko (source)

2001, PS1 — Goemon: Shin Sedai Shūmei!
— composed by Miki Matsubara (source) (EDIT: She only composed the theme song, see next post below.)

2005, DS — Ganbare Goemon: Tōkai Dōchū Ooedo Tengurigaeshi no Maki
— composed by Yasuhiro Ichihashi (source)

Do any other games have composer breakdowns, or were composed by just one person?

She's only credited for the theme song. Music director is Masahiko Kimura, music composers/arrangers are Ayako Yamaguchi (山口綾子), Nobuhiro Ouchi (大内伸弘), Kaori Idaya (井田屋香里), and Masashi Sugiyama (杉山将司).

Thanks for the info Mac_Tear. The MobyGames credits are a bit misleading, because it credits Miki Matsubara for composition and the four people you mentioned for sound, but it doesn't clearly group together the theme song credits as its separate thing. In the last link you gave, the in-game credits have big spaces before and after all the theme song credits, and that's where Miki Matsubara's composition credit occurs, so it's clear she was only responsible for composing the theme song. MobyGames credits don't reflect that, unfortunately.

Konami, like Nintendo, leaves a lot to be desired when it comes to composer breakdowns or soundtrack releases in general. I would really love to know some breakdowns, like for the Goemon series in this case. Sadly, I'm not familiar with the team behind the music here.
