The tag data in the FLAC/MP3 files on the DVDs contain a full artist (arranger?) and composer breakdown for all four albums, but I'm not sure how accurate or precise they are, especially regarding the two already existing albums. It might be good if someone more knowledgeable about the music of YU-NO looks at these. Anyway, here's the dump where I only romanized the artists' names:
Tag data for YU-NO [Original NEC PC-9800 Series Version]: Spoiler:
Tag data for YU-NO [Remake Version]: Spoiler:
Tag data for YU-NO SUPER SOUND TRACK, which corresponds to this album: Spoiler:
Tag data for YU-NO Original Sound & Voice Collection, which corresponds to this album: Spoiler:

I know that this release is on a DVDs. Does anyone know if there's an easy way to extract the files (as MP3, for example) from the DVDs so you can listen to the music without the discs?

The DVDs are all DVD data discs and contain all four albums as FLAC and MP3 versions. It doesn't get much easier than this if you're interested in having the albums digitally. You only might want to re-encode the FLAC files as they were encoded with lowest compression level, so they're unnecessarily large.

Has it been confirmed who did the new arrangements for the Remake? I think I read somewhere that Ryu Takami did them.

For the tracks unique to disc 4, the original compositions by Keishi Yonao, all his tracks are listed in the English translation as appearing first, and then the rest of the tracks are listed. The track times are right, but the names are all off (just compare to the Japanese tracklist of disc 4).
I am working on the reorder to remedy this now. EDIT -- order fixed! But the translations on the Yonao tracks that were here previously were ... a little rough. I'm pretty sure the track titles with parentheses aren't supposed to be listed twice. One is the name in Kanji, the other breaks it down into Hiragana... yes? Can someone confirm? Yeah, the bits in brackets are just the readings for the kanji.

Is Disc 3 of the corresponding original voice album included here? It's on this release's tracklist, but it also looks like someone just copy-pasted from the original release.

This set was never released independently, right? It exists only as a bonus included with the limited edition of the remake?

That’s correct.
