I find it weird that the cassette version contains more tracks than the vinyl version...

Is there a possibility that the cassette versions of other anime theme song singles also contain karaoke versions? Or is it just this one?

Lots of cassette releases came with karaoke tracks compared vinyl and also mini-cd release.
It's very rare 7 inches vinyls came with karaoke tracks due very limited time storage.
Lots of karaoke tracks were gems since they aren't released until today (hokuto no ken is one example)
