Toru Minegishi (who appears as co-host) confirms that he is returning as sound director and composer in Splatoon 2.

Mahito Yokota also appears and mentions a bit about the Super Mario Odyssey music, but I can't quite make up if he is confirming that he is composing for the game or not (although it's more than likely that he is).

You're welcome. Just updated the 2nd day videos (rock band perf #3 and big band) to higher quality official ones by Nintendo.

Edit: Jintor on NeoGAF did a more detailed breakdown with links for every piece played. Useful for those peeps that don't want to listen to all at once, as well as comparing the different rock band performances.
