We can't know until both releases are out.
But there's high chance the difference will only be about the packaging and the label of the disc.

I think the US is a digital download only, but I'm not positive.

As for the composer, I am in the camp that believes it is Sakuraba (it's pretty obvious, really). I've been given subtle hints by those familiar/involved with the project/game that it is him, but no flat out confirmation due to NDAs.

Unexpected confirmation. It's his style, but also close to its precursors. I guess Sakuraba was easier to get than Kida.

I don't know. As far as I know, Kida still works at From Software, where this is developed, but I could be wrong.

There's no physical disc with the US limited edition.
They got a "steelbook" case in exchange.

There is a downloadable version of the OST contained within the limited edition, however. Couldn't we just change the classification to "digital?"
