We have a few composer credits from Scarlet and Violet confirmed:

-Toby Fox mentioned on a newsletter that he composed "Tera Raid Battles", "Academy Ace Tournament", "Battle! Zero Lab", and "Area Zero" (the last one was arranged by Go Ichinose). Also, the melody for "Academy" has been used as a leitmotif for the entire game by other composers.

-Go Ichinose mentioned on Twitter that Teruo Taniguchi was in charge of the Team Star related music.

Minako Adachi retweeted this tweet which has a link to an analysis of the "Battle! (Gym Leader)" theme from Scarlet/Violet, and then tweeted something in the lines of being honored by this analysis (if google translate is to be believed).

It was already kind of obvious but I think this is an argument that seems to indicate that Minako Adachi composed this theme (of course, this is not a 100% confirmation but a solid argument nonetheless).
