I was only able to find a very low-res blurry image of the back of the CD with the full track list w/each composer, but cross-referencing it with the composers named in the game's credits was enough context to spot each name on the list.
Unfortunately there were two artists (who weren't in the game's credits) involved in two of the album-only arrangements, so I couldn't deduce those from the image.

So, I've been desperately trying to get a copy of Music Night as well. If I do get one, I'll be sure to add scans—which hopefully have the full credits—and we'll be able to fill in the final pieces of the puzzle.

I found a slightly higher quality image of the back of the case (and a few others). You might be able to read the names a bit better.
