WOW… Who would have thought you could take music from Resident Evil (known for its ambient soundscapes) and turn it into a lush, moving, melodic, orchestral performance? Great album!

It looks like there are a few tracks on here done by different artists. Tracks 1 and 11 in particular have some asterisks next to them. Can anyone decipher?

The asterisk just gives the name of the pipe organist.

What exactly did Mamoru Samuragoch compose?

EDIT: Well, we have credits for all the tracks here, so I'll remove him since he apparently didn't work on any of these.

Where did you get the English name of the second track?
Discogs version: I Won't Finish This As Just A Dream (Orchestra Version)
Google Translate: In the dream does not stop (Orchestra Version)
So, why your version is correct?
