Shouldn't we use the cover art from the download version rather than the scans since it's of higher quality and has proper colors?

No we should not.
Trying to have a good picture just to display a 250x250 picture is pointless, unless the said picture is under that size. I'd rather have scanned covers from the real product, than a digital cover that does not match with the rest. So while i accept a digital front cover when it's the only thing we have, i always choose scans when we got a set.
